South Indian Vegan Dosa (Gluten-Free)
Dosa is a quintessential South Indian delicacy made from a fermented batter of rice and urad dal that resembles a thin crepe. Led by Chef Vandana Shah, you will learn how to recreate this beloved staple in your own home!
Begin with a comforting cup of Homemade Vegan Masala Chai as you settle in. Then, dive into crafting the perfect Dosa - a crepe-like delicacy cooked on a griddle to achieve a delicate balance of crispiness on the outside and a soft, slightly chewy interior. You will also learn the secrets of making Milagai Podi, a beloved South Indian smoky spice mix that packs a fiery punch, also known as "gunpowder", to be used in the making of the dosa. Next, explore the art of blending spices to create your own Sambhar (Lentil Stew) powder. This becomes the rich and aromatic backbone for making the Sambhar, which is known for its delightful balance of tangy, spicy, and savory flavors. The dosa will be served with two delectable chutneys: the refreshingly creamy Coconut Cilantro Chutney, and the boldly rich Tomato Onion Chutney. To round out your experience, use the same dosa dough to whip up a flavorful Uttapam topped with fresh vegetables, a traditional South Indian dish that resembles a savory pizza. This class is perfectly vegan, naturally gluten-free, and irresistibly delicious! (FYI, some recipes include peanuts and sesame seeds.)

Vandana derives immense joy from creating sumptuous vegan delicacies for her extensive circle of friends and family in the vibrant Seattle area. She specializes in the art of transforming non-vegan Indian classics into delectable vegan delights and employs sourdough to craft authentic Indian savory snacks. In addition to her culinary prowess, Vandana is a certified Iyengar Yoga teacher, sharing her passion for yoga through her home studio.
