Char Siu Bao
Char Siu Bao (叉燒包) is a classic dim sum favorite and a must-order when my family goes for dim sum. Char Siu is Chinese BBQ pork marinated in a sweet and savory sauce and roasted to perfection with caramelized edges. During this 2-hour online cooking class, I will teach you how to make the homestyle version of this classic steamed bao, creating a juicy filling with pre-made BBQ pork. During the class, I will also share tips on how to make your own Char Siu at home if you want to create this dim sum from scratch.
The class is interactive so we will have lots of time to practice making that perfect pleats or a bullet-proof way to beautifully seal the buns without pleating. We will also have time to chat about the less common ingredients used to naturally create that red hue without food coloring. I will share fun cultural tidbits and family stories to make this a full immersion experience. Hope you will join me!
What you need.

Ingredients for the dough:
Active dry yeast, 3/4 tsp
Sugar, 1 tsp
Warm water, 3/4 cup
Flour, 2.5 cups
Ingredients for the filling:
Char siu, 1.5 cup
Shallots (small), 3
Red bean curd or Shanghai bean curd, 1.5 tablespoons
Honey, 1.5 tablespoons
Light soy sauce, 1/2 teaspoon
Chinese (Shaohsing) rice wine, 1/2 teaspoon
Kitchen Setup:
Large bowl and clean towel for the dough
Medium bowl for filling
Small saucepan for filling
Rolling pin or empty wine bottle
Bamboo steaming basket or any steamer
Parchment paper or wax paper
Wok or large pot for steaming
