Sakura-Themed Afternoon Tea
Come celebrate the delicate flavors of spring with Seattle's one-and-only Sakura-Themed Afternoon Tea, where you will learn to create an amazing selection of sweet and savory seasonal treats inspired by the cherry blossom tree.
The highlight of this class, as with most Afternoon Tea experience, is the English scone. In this class, you will learn how to make a Sakura Scone from scratch, achieving that classic light and flaky cream scone texture, infused with sakura flavor. The scone is served with fruit jam and a creamy sakura mascarpone cheese for a beautiful blend of sweetness and floral notes.
For the sweet treats, we will make a classic Japanese sweet, Kanto-style Sakura Mochi. It is a pink, crepe-like mochi filled with sweet red bean paste (anko) and wrapped in a traditionally-salted sakura leaf (or topped with a pickled sakura) for a unique flavor and texture combination. Next, we will make a Matcha Warabimochi Parfait with Mini Hanami Dango, which layers several traditional elements into an ice-cream parfait for one visually appealing dessert. Matcha Warabimochi is a jelly-like dessert with a chewy texture similar to mochi. Mini Hanami Dango are small, colorful mochi balls typically made in three colors: pink, white, and green, representing cherry blossoms, purity, and new growth.
For the savory treats, learn to craft beautiful, bite-sized Temari Sushi with a sakura design. The word "temari" comes from the traditional Japanese handballs used in games, giving these “round sushi” a charming and playful name. Last but not least, Salmon Mousse on Crispy Shokupan with Sakura Pink Salt is an elegant dish where you get to practice your piping skills! This dish features a smooth, airy spread made with smoked salmon and cream cheese, served on a crostini made with Japanese milk bread, and finished with sakura pink salt to add a subtle floral note and a touch of elegance.
This class includes expert tips on how to beautifully plate a tiered cake stand, how to brew the perfect cup of tea (choice of Japanese Green Tea, Hojicha, or Genmaicha), and how to host your own Afternoon Tea at home with the full experience while keeping it fun!
Your instructor, Winnie Au, brings a wealth of knowledge and a love for sharing culinary expertise. With a Bachelor of Education in Home Economics and years of teaching experience in Hong Kong and the U.S., Winnie specializes in Asian cuisines and pastry arts. She has honed her skills through numerous baking and cake decoration programs, as well as international qualifications in cake decoration and handcrafts across the U.S., Canada, and Hong Kong.

During this class, we will prepare and cook from scratch all 5 courses on the menu.
Throughout the process, we will pause to introduce new and lesser-known ingredients that are easily found in the greater Seattle area.
The small-class setting means all students are encouraged to ask questions and discuss potential variations for each dish that will make it more accessible and adaptable in everyday cooking.
