Dim Sum Classic: Char Siu Bao

Did you know that Dim Sum literary translates to “lightly touch (dim) your heart (sum)”? These bite-sized, handmade delights have traditionally been crafted one-by-one in the early morning hours by a team of dim sum chefs for the loyal breakfast crowd. Join this class to discover some of the classic items on the dim sum menu.

Char Siu Bao is the iconic Cantonese steamed bun filled with sweet and savory BBQ pork. Join this class to unlock the secrets of making homestyle Char Siu Bao, with Homemade Chinese BBQ Pork. This class will also cover three more classic dim sum dishes, starting with Spicy Steamed Spareribs in Ground Bean Sauce (Tsing Pai Kuat), a much loved dish because the bite-sized spareribs are the uniquely flavorful cuts of meat perfect for dim sum. You will also learn to prepare a Chinese New Year dish, Stir-fried Sticky Rice with Chinese Sausage (Nor Mai Fan), a popular glutinous rice dish flavored with aromatic Chinese sausage, shiitake mushroom, dried shrimps, and dark soy sauce, sometimes eaten as a meal on its own. Plus, master the vibrant Dim Sum Style Gai Lan with Oyster Sauce, a way of preparing gai lan that brings out its own unique crispness, sweetness, and color that leaves many people happily surprised.

In this immersive class, you’ll not only learn the techniques but also the stories behind these beloved dishes. Experience the joy of creating and savoring these dim sum treasures, and bring a touch of authentic Cantonese cuisine to your own kitchen.

During this class, we will prepare and cook from scratch all 5 courses on the menu.

Throughout the process, we will pause to introduce new and lesser-known ingredients that are easily found in the greater Seattle area.

The small-class setting means all students are encouraged to ask questions and discuss potential variations for each dish that will make it more accessible and adaptable in everyday cooking.
